Check out these symbols found in episodes of Supernatural:

Binding Link

A Binding Link, seen in Born Under a Bad Sign, is used as a 'lock' for a demon to lock itself in the body of the person they are posessing. If the lock is 'broken', or as far as we know, burned through, it unlocks.

Croatoan, seen in the episode (duh) Croatoan, was a word carved into a tree found at the remains of the Roanoke Colony. John thought that Roanoke might be the name of a demon, sometimes known as Dever, sometimes Reshef, a demon of plague.
Protective Circle

Found in the Key of Solomon (according to Bobby), this symbol, drawn about three feet in diameter, can be used to trap demons. Basically it is a Fifth Pentacle of Mars inside a type of Heptagram with Hebrew written in the circle surrounding it. It is said of The Fifth Pentacle of Mars, the circle with the scorpion inside it, "Write thou this Pentacle upon virgin parchment or paper, because it is terrible unto the Demons, and at its sight and aspect they will obey thee, for they cannot resist its presence." Although Bobby said that demons are powerless while inside it, the demon known as Meg once used a chant to destroy it, while another demon created a windstorm while inside it.
Celtic Cross

A variation of the Celtic Cross was used by Sue Ann LeGrange in Faith to summon and control a Reaper. The cross appeared to be the average Celtic Cross with a Sun Cross on the horizontal line of the top.
Devil's Trap

A devil's trap is something that can be used to keep demons out of a certain area. Sam once used a devil's trap to make the trunk of the Impala into a lockbox and a massive devil's trap was built around a devil's gate in Wyoming, which the Winchesters and Bobby discovered in AHBL P2.
Reverse Cross

The reversed cross, also known as the cross of St. Peter, has also been used as an emblem of Satanism, although more often by non-satanists than believers. Historically, it has been a symbol of humility, a symbol of Martyred St. Peter's refusal to be crucified in the manner of Christ, preferring to be hung upside down.

Ectoplasm is basically stuff left behind by a seriously pissed-off spirit. Icky stuff.
Sigil of Sulfur

A less commonly used symbol of Satanism that popped during the 60s in San Francisco.

Scientifically, sulfur is the chemical element that has the symbol S and atomic number 16. It is an abundant multivalent non-metal. Sulfur, in its native form, is a yellow crystalline solid. In nature, it can be found as the pure element and as sulfide and sulfate minerals. It is an essential element for life and is found in two amino acids, cysteine and methionine. Its commercial uses are primarily in fertilizers, but it is also widely used in gunpowder, matches, insecticides and fungicides. Elemental sulfur crystals are commonly sought after by mineral collectors for their brightly colored polyhedron shapes. It is also a residue left behind by demons and was found in the bloodstream of victims of the 'demonic virus' in Croatoan.
Tibetan Spirit Sigil

A Tibetan Spirit Sigil was drawn from a textbook in Hell House on the wall of a house, creating a Tulpa.

A Talisman was used in Hollywood Babylon to bring back and control spirits to make them kill. Usually, a talisman, or amulet, is any object intended to bring good luck and/or protection to its owner. Potential amulets include: gems or simple stones, statues, coins, drawings, pendants, rings, plants, animals, even words said in certain occasions, to repel evil or bad luck.
Hookman Symbol

The Hookman legend appeared in the episode Hookman (again, duh) and the symbol appeared as a signature at the murder scene and on the gravestone of the Hook Man at the graveyard that Dean had to dig up and salt and burn.
Sigil of Azazel/Seal of Saturn

The Sigil of Azazel on Supernatural, also known as the Seal of Saturn, was used to summon Azazel, the Yellow-Eyed-Demon when John wanted to make a deal with it.
Zoroastrian Symbol

This symbol, assumed to be Zoroastrian in nature, was used by the demon Meg to summon Daevas in the episode Shadow. No other information was ever given by our trusty encyclopedia of weirdness, Sam, and I could not find it online.
Cross of Questioning/Blue Oyster Cult Symbol

The Cross of Questioning was seen by Dean on a BOC album and helped realize what was going on in the episode Hell House. It was one of many symbols painted on a walls of a house to make it seem creepy and haunted.
Death Omen

A death omen was seen in The Usual Suspects, when a spirit, who Sam and Dean originally thought was a malevolent spirit killing people, was really warning people of their impending death.
Anasazi Symbol

The Anasazi Native Americans were located in the Four Corners region (Northern New Mexico west of the Pecos River, southwestern Colorado, most of southern Utah, and northern Arizona south to the Little Colorado River). The Anasazi existed around two thousand years ago and are thought to be the ancestors of modern Indian tribes like the Hopi, the Zuni and the Pueblo.

A pentagram is the shape of a five-pointed star drawn with five straight strokes. The word pentagram comes from the Greek word pentagrammon, a noun form of pentagrammos or pentegrammos, a word meaning roughly "five-lined" or "five lines". Sam said that it actually is protection against evil, really powerful, if you believe in that kind of thing, to which Dean replied, "Okay, thank you Unsolved Mysteries."
